Hobodon, Thank you. The sweet potato I have is always light color, usually orange. Is this specific to your home? I do not intend to ask personal question, just about health and food.

Hello Breezy. You are right. We have several different kinds of sweet potatoes with different color like light/dark brown/purple. In Korea, they sell with different names like "pumpkin sweet potatoes (light brown)" or "chestnut sweet potatoes (dark brown)" or "purple sweet potatoes" that is mine this time. Also, I steamed it instead of grill, so the skin is wet and looks darker, maybe. :)

Hobodon, This looks very tasty. I have never seen light mint color on the inside of a sweet potato. I like to put together a colorful plate of the best/healthiest foods. Better to show the young to choose wisely. :-)
